Old-Fashioned Zucchini Bread

Simple and Delicious Zucchini Bread Perfected In 1 Hour

I love pretty much any Zucchini bread, but this is by far the best zucchini bread I have ever made! It has a very distinct and yummy flavor, and the only way I can describe it will probably make you think I’m older than I am (I did start baking at a very young age, I’ll have you know)!

Do you all remember those bags of Amish Friendship Bread starter mix that used to go around? The bread it produced was delectable – if you actually followed through with the seemingly endless steps but you really had to work for it! It was a real pain, and looking back, passing around those bags of what were legitimately bacteria breeding enclosures is kind of a scary notion! Okay, maybe not the best thought when talking about food, lol!

What I’m trying to say is: that bread was delicious, and the flavor of this bread reminds me of the uniquely sweet and light flavor that all the work of making it produced, but without all the work! This delicious zucchini bread is a quick and easy alternative that can bring back a hint of the amazing flavor of Amish Friendship Bread without the all baggage!

Ingredients

1 ½ cups flour

¼ teaspoon salt

1 cup sugar

¼ teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon baking soda

¼ teaspoon nutmeg

1 beaten egg

¼ cup vegetable oil

1 cup finely shredded zucchini

¼ teaspoon lime zest or lime juice

Directions

Preheat oven to 350 degrees F and grease an 8-inch loaf pan and set it aside. In a medium mixing bowl, stir together the flour, sugar, cinnamon, baking soda, salt, baking powder, and nutmeg. Make a well in the center of the dry mixture.

In another bowl, combine the egg, shredded zucchini, oil, and lime. Pour zucchini mixture into the well of the dry mixture and stir until just combined.

Pour into the greased loaf pan and bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before slicing (if you can stand to wait that long)! This recipe yields one 8 inch or regular size loaf.
