This week I would like to share a guest post I did for the My So Called Yoga Life Blog. Lisa, a wonderful fellow blogger runs this blog. She’s an amazing yogi and yoga teacher. I’ve been following her blog for some time now. Her passion for yoga and healthy lifestyle is truly inspiring. Lisa asked me to share with her readers a vegetarian/vegan recipe. Whether you’re a vegetarian, vegan or not it’s always a good idea to go off meat for a while. I’m not vegetarian but I’m definitely a proponent of a healthy lifestyle. So I immediately thought of a tasty meal I’ve created before that was inspired by my trip to Jamaica a few years back. The dish I came up with was a healthy vegetarian eggplant stew.

Why Vegetarian Eggplant Stew?

Last summer I was really trying to make an effort to eat less meat. I also wanted to introduce more veggies into my diet. I’ve always loved chilly and various stews. So I really wanted to put my own spin on a healthy vegetarian eggplant stew. What I love about this stew is the fact that it’s very easy to make and only requires simple ingredients. Those include: eggplant, tomatoes, onions and a bunch of great spices including cumin. It’s also essentially a one-pot dish therefore it’s very fast and convenient.

In addition what makes this stew so good is all the healthy ingredients it contains. Both eggplant and tomatoes have an abundance of vitamins and minerals you body craves. To find out all about the benefits of these veggies and to get the full recipe visit Lisa’s blog.

    We eat a lot of vegetarian dishes here. I usually roast veggies, toss with pasta and drizzle with balsamic dressing. This stew sounds like something I’d love – easy to put together, healthy, yet flavorful. Will try it out.

    This looks delicious, I’m going to check the full post out for sure. I love eggplant, so versatile. I worked with a chef once who did something similar although he would scoop out the flesh of the eggplant and then after making it, serve it in the skin. Looked great.

      Eggplant is a bit of an acquired taste. I started liking it because my boyfriend is Italian and his mom cooks a lot of it.

    I should this recipe as I never know how to cook eggplant properly. Thins thing is so tricky, can soak the whole oil in and in the end be dry.

      Oh I know what you meant. I’ve never been too comfortable with eggplant but I can definitely attest that this recipe does work. The eggplant comes out so soft and juicy. It’s a great option for vegetarians to still be able to make a stew.
